I'm Mousie, and I've just joined. I'm not wheat free, but my Mum is allergic to wheat so our house is mostly wheat free. I've been living in a wheat free house for probably 12 years, and have learned how to cook wheat free rather well. (one of my teammates on Lassies has a wheat allergy as well and missed chocolate cake, I made her one with barley flour and corn starch and sweet rice flour and she thought it was nicer than "normal" cake) In addition to wheat, my mum is also allergic to xanthan gum, which is the substitute for gluten in most wheat free products as well as a thickening agent in almost everything in the US. Has anybody else had a similar experiance or know what it is made of? I look forward to sharing gripes and recipies.
